Parsley and Lemon Butter Chicken Kabobs
Ingredients:
1 ½ pound boneless skinless chicken breasts, cut into large cubes
1 Onion, cut into squares
3 Peppers, cut into squares
Skewers sticks
½ cup butter (2 sticks)
1 Lemon (zest & juice)
¼ cup chopped parsley
Pinch Salt & Pepper
To prepare sauce:
Preheat the grill to medium-high heat, and grease with preferred oil.
When ready to grill, thread the chicken onto the skewers, alternating between chicken, onion and pepper pieces.
Grill the chicken kabobs until fully cooked, about 10 minutes, turning the skewers every couple minutes to allow for even cooking.
Soften butter, then add in lemon zest w juice, parsley, salt & pepper. Mix well.
Brush onto freshly grilled chicken. Serve extra on the side.
