Parsley and Lemon Butter Chicken Kabobs


  • 1 ½ pound boneless skinless chicken breasts, cut into large cubes
  • 1 Onion, cut into squares
  • 3 Peppers, cut into squares
  • Skewers sticks
  • ½ cup butter (2 sticks)
  • 1 Lemon (zest & juice)
  • ¼ cup chopped parsley
  • Pinch Salt & Pepper

To prepare sauce: 

  • Preheat the grill to medium-high heat, and grease with preferred oil.
  • When ready to grill, thread the chicken onto the skewers, alternating between chicken, onion and pepper pieces.
  • Grill the chicken kabobs until fully cooked, about 10 minutes, turning the skewers every couple minutes to allow for even cooking.
  • Soften butter, then add in lemon zest w juice, parsley, salt & pepper. Mix well.
  • Brush onto freshly grilled chicken. Serve extra on the side.
